After working for 14 years as a commis/ chef de parti/ sous/ and head chef in many renowned establishments around the world, Ireland, the Channel Islands, Austria, Australia, New Zealand and central America Martin returned to Ireland and fell in love with the Dingle Peninsula where he opened Global Village Restaurant in June 1997.
Open for 25 years Global Village Restaurant championed local food, short supply chains, and natural farming, growing our own vegetables chemically free in Ventry, buying daily fish from day boats working with local farmers, and supporting local producers.
Voted “Best Restaurant in Kerry in 2013”
Voted “Best restaurant in Ireland” in the category of “Emerging Irish Cuisine“ in 2014.
Holding a coveted place in the Michelin guide for 14 years
McKennas best 100 Restaurants in Ireland for 14 years.
Martin was also a member of Eurotoques , European community of chefs for 10 years.
In 2022 he closed the Global village to focus on sustainability and mentoring for the hospitality industry opening
Global Village Consultants.
