Mark Jennings is a chef and owner of former renowned restaurant Pilgrim's in Rosscarbery in West Cork for the past 8 years. Previously Mark has been head chef in Cork's Cafe Paradiso as well as working in good restaurants in Australia & the UK. Mark cooks with an emphasis on seasonal produce from his locality through a daily changing menu, as well as using lots of wild ingredients he forages himself. His food is fun and full of lip-smacking tasty flavours. Currently on a break from running a busy restaurant it gives him the chance to set-up his own little market garden, spend time with his young family and the opportunity to do a demonstration here with us at the Ballymaloe May Fair.
